Kentucky Derby, a Recipe & an Update

So this past weekend Rob and I celebrated the Kentucky Derby with our friend Brian in typical Rob & Rachel fashion….no – we did not don big red feathered hats!….We made a celebratory drink – the Mint Julep of course – and ate some delicious food

The Juelps were wonderful….but what made the weekend even more wonderful was the delicious food we prepared. Here’s one of the dishes we prepared….it’s becoming a Spring favorite for us so we thought we’d give out the recipe here for everyone.
Beet and Tangerine Salad
2 cans of sliced beets
2 cans of tangerines in light syrup or juice
4 stalks of celery chopped
4 tablespoons of Balsamic Vinegar
2 tablespoons of olive oil
2 teaspoons of dry mustard
salt and pepper to taste
So this is a really easy one (which is why I am the one to make it instead of Rob, he’s the go-to-guy for any more complicated dishes):
All you do is drain the beets and tangerines
Then mix all the ingredients together in a bowl
And serve!
It’s a great salad and it looks really pretty too!
Here’s some Real Estate Updates for everyone coming out of this weekend…..

Since we last updated (5/1/08) we have seen 51 new properties come on the market, 32 close, and 19 go under contract.

Of note:
-4 Silver Star units ranging from $969,000 (2bd/2ba, 1418 sq ft) to $2.65m (4bd/6ba, 3699 sq ft). That’s $578psf to $717psf.
-A lot at the Colony at the Canyons for $1.895m for a nice 20 acre ski in/ski out parcel.
-Hidden Meadows in Lower Deer Valley listed at $3.65m sold for $3.2m (7192 sq ft, 5bd/6ba)….at $445psf that is about right for that size of a home in Lower Deer Valley.
-Lodges at Deer Valley unit for $912,500 (2bd/3ba, 1318 sq ft) that was listed at $929,777. PENDING:
-Parkwood Place home in Old Town (right by the Town Lift) at $4.8m (4260 sq ft, 4bd/5ba)…at $1127psf, I’d have to say that is not bad for that seller!
-Aerie home at $1.499m (5581 sq ft, 5bd/4ba)….for a remodel the buyer got a pretty good deal at around $250psf-Hidden Meadows in Lower Deer Valley lot at $1.275m for 3 acres.
-Solamere home that I thought would not be on the market long at $1.295m (3295 sq ft, 4bd/4ba)…you can’t replace this lot, even though the home needs a little work. It was on the market for 86 days.
-Arrowleaf unit at Empire Pass in Deer Valley for $2.2m (1838 sq ft, 3bd/4ba).

-Old Town home on Ontario Ave at $899k….it is only 1806 sq ft, but looks like a nice buy for someone that does not need too much house.
-Glenwild home at $4.5m (8265 sq ft, 5bd/7ba)….great views and awesome golf!
-Almost an acre for ski in/ski out in Deer Crest at Deer Valley came on at $2.799m.
-Lookout at Deer Valley in the Silver Lake area for $3.995m (5717 sq ft, 5bd/7ba)…this is the newest development in Silver Lake at Deer Valley and offers a great ppsf when compared to Empire.

In other news:
-The Soccer team REAL Salt Lake has decided to make Park City their practice home for next season and is looking to move the operation here full-time. They don’t have any space down in the valley and can train at higher altitude up here.

-Through the first of May 2008 building permits are just about at the same level as last year. In 2007 at this time Park City was at $81m and for 2008 Park City is at $77m. Much of this money is brought on by large development such as the St. Regis at Deer Crest and the Montage at Empire Pass. Both are fabulous ski in/ski out developments at Deer Valley and will add even more glitz to the #1 ski resort in North America.

    i dont remember eating beets. i must have left before those, and im glad i did! im just messing, looks like a good recipe.
